Make fine&lt;/div&gt;&lt;div align="left"&gt;crumbs, with graham crackers (1/2 cup) and mix thoroughly with melted margarine;&lt;/div&gt;&lt;div align="left"&gt;set aside. Soak gelatin in cold water. Put 2 tablespoons water, cottage&lt;/div&gt;&lt;div align="left"&gt;cheese, and lemon extract into a blender or food processor and cover; turn to high&lt;/div&gt;&lt;div align="left"&gt;speed for 10-15 seconds. Add partially set gelatin mixture; turnto high speed 15&lt;/div&gt;&lt;div align="left"&gt;seconds or until well blended. Pour into prepared pan. Sprinkle graham cracker&lt;/div&gt;&lt;div align="left"&gt;crumbs evenly over top. Wash, hull, and dry strawberries. Combine crumbs, almonds, sugar and butter. Pat mixtur on&lt;/div&gt;&lt;div align="left"&gt;bottom and sides of a 10 inch springform pan. cream together the cream cheese,&lt;/div&gt;&lt;div align="left"&gt;sugar, heavy cream, liqueur, and 1 t vanilla. Beat in eggs, 1 at a beating well after&lt;/div&gt;&lt;div align="left"&gt;each addition. Beat mixture until light. Pour into crumb lined pan. Bake in middle of&lt;/div&gt;&lt;div align="left"&gt;oven for 1 1/2 hours or until top of cake cra and knife inserted in middle comes out&lt;/div&gt;&lt;div align="left"&gt;clean. Let stand on rack 5 minutes. Combine sour cream, 1 t vanilla, and sugar. Mix&lt;/div&gt;&lt;div align="left"&gt;well and spread evenly ove cake. Bake for 5 more minutes. Place on rack and let cool&lt;/div&gt;&lt;div align="left"&gt;completely. cove lightly with wax paper and let chill overnight. In food processor, process sugar&lt;/div&gt;&lt;div align="left"&gt;and almonds until nuts are finely ground. Add flour and salt; pulse to blend. Cut up&lt;/div&gt;&lt;div align="left"&gt;butter into bits; add to flour mixture. Pulse until mixture resembles coarse crumbs.&lt;/div&gt;&lt;div align="left"&gt;Add egg yolk and almond extract; pulse just until dough holds together. Press dough&lt;/div&gt;&lt;div align="left"&gt;into prepare pan to line bottom and 2 inch up sides. Refrigerate 1 hour. Preheat oven&lt;/div&gt;&lt;div align="left"&gt;to 400. Bake crust 8 minutes or just until golden. Place on wire rack; let stand stand&lt;/div&gt;&lt;div align="left"&gt;until cool. Make filling: In large bowl, with electric mixer at medium-high speed, beat&lt;/div&gt;&lt;div align="left"&gt;cream cheese until light and fluffy. Gradually beat in sugar; beat 3 minutes or until&lt;/div&gt;&lt;div align="left"&gt;mixture is blended and smooth. Beat in lemon zest. At medium speed, beat in eggs&lt;/div&gt;&lt;div align="left"&gt;and yolks, on at a time, beating just until blended after each addition. At low speed,&lt;/div&gt;&lt;div align="left"&gt;beat in heavy cream and liqueur. Beat in flour just until blended. Increase oven&lt;/div&gt;&lt;div align="left"&gt;temperature to 500. Pour filling into cooled crust in pan. Bake 12 minutes. Reduce&lt;/div&gt;&lt;div align="left"&gt;oven temperature to 200. Bake cheesecake 1 hour longer, cover loosely with foil if&lt;/div&gt;&lt;div align="left"&gt;top browns too quickly. Blend in egg. Add flour; mix well.&lt;/div&gt;&lt;div align="left"&gt;Spread dough onto bottom of 9-inch springform pan. Bake at 450 degrees F., 10&lt;/div&gt;&lt;div align="left"&gt;minutes. Combine cream cheese, sugar and flour; mixing at medium speed on&lt;/div&gt;&lt;div align="left"&gt;electric mixer until well blended. Add eggs, one at a time, mixing well after each&lt;/div&gt;&lt;div align="left"&gt;addition. Add peaches and liqueur; mix well. Pour over crust. In medium bowl, combine wafers and butter, reserving 1&lt;/div&gt;&lt;div align="left"&gt;tablespoon of the crumbs for garnish. Press remaining crumbs in bottom and 2&lt;/div&gt;&lt;div align="left"&gt;inches up sides of an ungreased 10- inch springform pan. Refrigerate. In a large&lt;/div&gt;&lt;div align="left"&gt;bowl, combine cream cheese and sugar; beat until smooth. Add eggs 1 at a time,&lt;/div&gt;&lt;div align="left"&gt;beating well after each addition. Add melted chocolate; beat well. Add remaining&lt;/div&gt;&lt;div align="left"&gt;ingredients, and beat until smooth. Pour into crust-lined pan. Bake at 325F for 55 to&lt;/div&gt;&lt;div align="left"&gt;65 minutes or until edges are set. Center of cheesecake will be soft. (To minimize&lt;/div&gt;&lt;div align="left"&gt;cracking, place a shallow pan with about 3/4 inch of hot water on the lower oven&lt;/div&gt;&lt;div align="left"&gt;rack while baking.) Allow cheesecake to cool in the pan for 5 minutes, then carefully&lt;/div&gt;&lt;div align="left"&gt;remove the sides of the pan. Allow the cheesecake to cool completely. Form a small depression or well in the center of the&lt;/div&gt;&lt;div align="left"&gt;mound. Add the egg yolk and the softened butter to the well, then blend these with&lt;/div&gt;&lt;div align="left"&gt;the dry mixture. Mix the ingredients thoroughly using your hands -- there is no&lt;/div&gt;&lt;div align="left"&gt;substitute for warm hands. Shape the dough into a ball and wrap in plastic wrap.&lt;/div&gt;&lt;div align="left"&gt;Chill for at least 10 minutes. Roll out the dough to a thickness of about 1/4-inch. You&lt;/div&gt;&lt;div align="left"&gt;should have a circle of about 11 inches in diameter. For best results, roll out your&lt;/div&gt;&lt;div align="left"&gt;dough between 2 sheets of waxed paper, then peel away the paper and cut the crust&lt;/div&gt;&lt;div align="left"&gt;in a 9 inch circle. Place the circle inside a 9 inch springform pan. Prick the crust&lt;/div&gt;&lt;div align="left"&gt;several times with a fork to keep the crust from puffing up during the baking. Place&lt;/div&gt;&lt;div align="left"&gt;the springform pan in the oven and bake for 15 to 20 minutes, or until light brown.&lt;/div&gt;&lt;div align="left"&gt;Allow to cool. Using the leftover dough, line the sides of the springform pan. Press&lt;/div&gt;&lt;div align="left"&gt;the dough against the sides of the pan, smoothing it so as to have a continuous layer&lt;/div&gt;&lt;div align="left"&gt;of crust all the way around the sides of the pan. Make sure that the side crust meets&lt;/div&gt;&lt;div align="left"&gt;the bottom crust all the way around. Brush the reserved egg white onto the shell,&lt;/div&gt;&lt;div align="left"&gt;covering the bottom and sides. This will seal the dough and keep it from becoming&lt;/div&gt;&lt;div align="left"&gt;soggy. Using an electric mixer, beat the cream cheese, sugar,&lt;/div&gt;&lt;div align="left"&gt;grated orange zest, Crantasia, and reduced orange juice until smooth. Beat in the&lt;/div&gt;&lt;div align="left"&gt;melted white chocolate and then the eggs, one at a time, beating just until&lt;/div&gt;&lt;div align="left"&gt;combined. Pour the cranberry glaze filling into the prepared crust, spreading evenly.&lt;/div&gt;&lt;div align="left"&gt;Pour the white chocolate filling over the cranberry layer and bake about 50 minutes&lt;/div&gt;&lt;div align="left"&gt;(the top will be dry and the sides puffed slightly - the center will not be set). Move&lt;/div&gt;&lt;div align="left"&gt;cheesecake to a wire rack and cool completely to room temperature.
